pecan, mustard crusted chicken breast, leek mashed potatoes,

madeira jus

hazelnut crusted grouper

spinach raviolis, butternut squash, sage nage and swiss chard

Friday

filet of beef

with horseradish mashed potatoes, wild mushroom ragout, frizzled onions

and cabernet demi reduction

                or

stuffed breast of chicken

with spinach, artichokes and ricotta with a

red pepper sauce

                or

blackened swordfish

with mango salsa, chiefs starch and vegetables
